Ive posted this before but ages ago...
Boil and cube enough beetroot to cover the bottom of a oven proof dish with a layer about an inch or so thick. Cover with a good layer of sliced mushrooms, make a nice strong cheese sauce, and pour over top. Sprinkle with oats and seseme seeds and bake in the oven till brown bubbling and crispy on top. I serve it with rice & beans, which is rice with blackeyed peas. Plus generally another veg such as carrots. ummmm yummy.
